Peppermint Bark


Since the holidays are right around the corner, and I happen to have a craving for some
 candy... what comes to mind first? Peppermint bark. Last year, Joshua and I went through so 
many bags of Ghirardelli Peppermint Bark. It is such an addicting treat. So today, we
 made a batch; some for ourselves and some as gifts for some friends. It's an incredibly
easy recipe (only three ingredients!) and one that ends up being a tasty gift!



Ingredients:
1 bag of semi-sweet chocolate
1 1/2 bag of white chocolate
peppermint (I used 6 candy canes)

Directions: 

1. Line a cookie sheet with parchment paper

2. Break the peppermint and place them in a heavy duty ziplock bag. Use a hammer, meat tenderizer, or a pan (in my case) to crush the peppermint. I used a strainer to separate the finely ground peppermint from the bigger chunks and set it aside. 

3. Melt the semi-sweet chocolate in a bowl over a pot of water (double boiler method) until it reaches a smooth consistency.

4. Spread the melted chocolate over the parchment paper evenly. 

5. Melt the white chocolate in the same method and once it reaches the smooth consistency, mix in the ground peppermint and spread over the chocolate.

6. Sprinkle the chunks of peppermint that we separated earlier over the white chocolate and let it harden in the fridge for about 2 hours. Once it hardens, break the candy into pieces.
