I have been itching to bake for quite some time now. I just couldn't find the time to.
I bought strawberries last Friday hoping to bake strawberry and white chocolate muffins on Saturday, but what a waste... I too busy reading the Hunger Games series (Can you believe I finished all 3 books in less than a week?! I know I keep talking about it, and I'm really late, but I still need to watch the movie!) 


Anyways, these muffins were inspired by Einstein Bagels. In college, there was an Einstein Bagels right outside of my classroom. So most mornings, I would stop in an get some coffee and one of their strawberry and white chocolate muffins before heading to class. I miss them so much, so I had to try to replicate it. The cinnamon streusel topping I added gives it an extra OOMPH! 

Strawberry and White Chocolate Muffins

MAKES 12

1 1/2 cups unbleached all-purpose flour
3/4 cup sugar 
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg 
1/3 cup milk
1 cup fresh chopped strawberries
Sprinkles of white chocolate chip

For the streusel topping:
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup or butter cubed
1 1/2 teaspoons ground cinnamon


1. Preheat oven to 400 degrees F 
2. Combine dry ingredients in one bowl. In another bowl, mix wet ingredients.
3. Combine both dry and wet ingredients, then fold in strawberries and white chocolate
4. Fill muffin cups 2/3 full, and sprinkle with crumb topping mixture.
5. To Make Topping: Mix together sugar, flour, butter, and cinnamon. Mix with a fork and sprinkle over the muffins before baking.
 (There may be excess)
4. Bake for 20 to 25 minutes in the preheated oven, or until done.
