In the mornings, I barely have time to get ready for my day, let alone eat breakfast, before rushing out of the door. I really should wake up earlier to have time to eat, but I can't give up an opportunity for more sleep. So until I can, I need a healthy breakfast option I can snack on at work or in the car. This week, it's homemade honey granola.
Honey Granola Recipe
3 cups of rolled oats1/2 cup of sunflower seeds
1/2 cup of slivered almonds
1/3 cup of honey
1/3 cup of light brown sugar
4 tbsp of unsalted butter, melted
1 tsp of vanilla
1/2 tsp of cinnamon
Dried fruit
1. Preheat oven to 375.
2. Mix rolled oats, sunflower seeds and sliced almonds (you can add other types of nuts like pecans and walnuts too!) in a bowl.
3. In a separate bowl, mix melted butter, sugar, cinnamon, vanilla and honey together.
4. Drizzle honey mixture over oats and toss until it is combined.
5. Spread the mixture evenly in a pan and bake for 20-30 minutes, stirring every 10 minutes.
6. Add dried fruit after baking.
**Note: The longer it's in the oven, the crunchier the granola will be. The granola will harden as it cools.
