Pumpkin Spice Pancakes + Maple Whipped Cream

Saturday was the first day of fall, my favorite season.

Although, we Floridians won't feel much of it until maybe 2 months from now, I still wanted to welcome in the season the right way. So I woke up bright and early to whip up some pumpkin spiced pancakes, recipe courtesy of Annie Eats. I also made maple whipped cream to give it a little something more than plain ol' butter. Super easy to make too. All you need a 6oz carton of heavy whipping cream and maple syrup. Use an electric mixer to foam up the cream, unless you want your workout for the day to be hand whipping it, then stir in the maple syrup. I used about 2 tablespoons, it's pretty flexible depending on how sweet you like it.

I am so ready for it to be fall, and thank goodness it is here (kinda)! I'm ready for all the layering, the smell of cinnamon and spices, and the holidays that are right around the corner... which means family gatherings and feasts galore.

How was your weekend? And did you do something to welcome in the fall too?

  1. These look delicious! I tried to make a pumpkin spice smoothie, but it turned out more like baby food. These however, look perfect and I will definitely try them. I love breakfast food.

I can't say I did anything super fall-y this weekend, but just feeling the chill of the air, opening the window, and taking a little walk (to take my trash out, but still) made me SO thankful for the fall upon us! Cute cute blog!
