I usually try to avoid making breakfast that takes a long time to make. But, like last week, sometimes I can't help it. Yesterday morning, I woke up with an urge to bake. I had all of the ingredients to make banana bread, so I rounded them up and made another mess in the kitchen.
Oh let me tell you! As that bread baked, how wonderful my house smelled. The aroma of vanilla and banana seeped out of the cervices of that little oven of mine and pushed its way out filling up all the spaces in the hallway and living room.
I had a pretty generous amount of batter, so I made some mini muffins. :) This recipe was passed down to me from my aunt. It originally called for mayonnaise, but I opted out, substituting it instead with yogurt. Best banana bread recipe I've ever used.
Banana Bread
4 ripe bananas, mashed2 cups of flour
3 eggs
1 cup of sugar
1 teaspoon of vanilla
1/2 cup of plain yogurt
1/2 teaspoon of salt
1 teaspoon of baking soda
Pre-heat oven to 350 degrees.
Mix sugar, yogurt, eggs and vanilla.
Add in dry ingredients slowly.
Add in mashed bananas.
Bake for 45 minutes to an hour
I LOVE banana bread! Every time I have ripen bananas I whip up a loaf - it's so super easy to make and it is so delicious. Your recipe is only slightly different to mine, so I might try it next time and then compare! And may I just say... your photos are really making me hungry now and craving banana bread right this minute! :)

ReplyDeleteI absolutely LOVE banana bread–I usually save a couple of bananas from every bunch in order to make it. I'm a purest, so usually it's no chocolate chips/walnuts for me. Yours looks so yummy, I love these pictures!

ReplyDelete2) This banana bread reminded me of my mum's bread, it was passed down to me too. Whenever she makes it (yes, I'm not great at baking), she spreads cinnamon and sugar on top, and because it's not consistent, it's sticks to it. I think it just give it that extra "yuuuum". Thought you might like that idea :)
