Chicken and Artichoke in Wine Sauce

Since my boyfriend is back in town, I have been cooking for him so that I can help him with his effort to lose weight, which I would assume is a win-win for him because not only is he eating healthier, he is also getting me to cook. So last night, I wanted to make something with chicken and artichoke. I made a quick sauce and threw it over some whole wheat angel hair pasta. Yum!

Ingredients
1/3 cup All-purpose flour
2 Halved chicken breast
1 Can of quartered artichoke, drained
2 tbsp. Olive Oil
1/3 cup Chicken Broth
1/3 cup White wine
Salt and pepper 
Oregano
Parmesan cheese

Directions
1. Mix some flour with the oregano, salt and pepper and use it to coat the chicken breast. (I used tongs to avoid mess)
2. Coat your pan with olive oil and cook the chicken until it is brown, set aside.
3. Add a little more olive oil to the pan and cook the artichoke until tender (5 minutes)
4. Mix white wine, chicken broth and about a tablespoon of excess flour mixture until smooth. Pour over artichoke.
5. The sauce will thicken and then add the chicken in to warm and cover with sauce.
6.  Sprinkle cheese over the chicken and serve with pasta or rice.
