// Artichoke reminds me of home because my parents make this great artichoke soup... I feel like I am getting sick... maybe I should make some too//
( I really do need a better camera...)
Ingredients
1/3 cup All-purpose flour
2 Halved chicken breast
1 Can of quartered artichoke, drained
2 tbsp. Olive Oil
1/3 cup Chicken Broth
1/3 cup White wine
Salt and pepper
Oregano
Parmesan cheese
Directions
1. Mix some flour with the oregano, salt and pepper and use it to coat the chicken breast. (I used tongs to avoid mess)
2. Coat your pan with olive oil and cook the chicken until it is brown, set aside.
3. Add a little more olive oil to the pan and cook the artichoke until tender (5 minutes)
4. Mix white wine, chicken broth and about a tablespoon of excess flour mixture until smooth. Pour over artichoke.
5. The sauce will thicken and then add the chicken in to warm and cover with sauce.
6. Sprinkle cheese over the chicken and serve with pasta or rice.
