Slow Cooked Pork Loin



It's been a while since I was able to cook a meal for Joshua. So while I was in town, I made a small menu for  us, and one of the meals I planned out was a Glazed Pork Loin. I've never used a slow cooker before and thought I can try it to make this simple dish. It worked out perfectly because it didn't require me to stand in the kitchen all day to prepare it, giving me more time to play in Orlando. I literally seasoned the pork filet, popped it in the slow cooker, and left the whole day for lunch and shopping. I came back and dinner was practically waiting for me. I served it with a side of spinach salad and a garlic potato patty. The slow cooker is my new kitchen friend.

Ingredients:
2lb pork tenderloin
Salt
Pepper
1/2 cup of water

For the glaze:
1/2 cup of brown sugar
1 tablespoon of cornstarch
1/4 cup of balsamic vinegar
1/2 cup of water
2 tablespoons of soy sauce


Directions:
1. Season the tenderloin with salt and pepper
2. Add 1/2 cup of water into the slow cooker and place in the tenderloin
3. Cook for 6-8 hours on low.
4. To make the glaze, mix ingredients and heat over the stove until it thickens.
5. Brush over the roast 2-3 times in the last hour of cooking. 
6. Serve with remaining glaze.
