Sometimes I like to wake up a little earlier on a Sunday morning to whip up something new and savory.
Ham, Potato and Spinach Frittata
Recipe adapted from Real Simple
3 Tablespoons olive oil
Bundle of spinach, chopped
Diced ham
8 large eggs
1 small onion
2 cloves of garlic
1/2 cup cheddar cheese
diced potatoes
salt, pepper, cajun seasoning
1/4 cup milk
1. Preheat oven to 400 degrees. Mix together eggs, cheese, milk, salt, black pepper and cajun seasoning.
2. In a skillet, cook spinach until wilted. Set aside. In the same skillet, cook the onions until translucent, add garlic and potatoes. Cook for another 4-5 minutes.
3. Add ham. Cook together for a few minutes then add egg mixture.
4. Stir once, lift the egg mixture to let the rest of it flow underneath and transfer to oven for 12-14 minutes.

This looks delicious! Breakfast/brunch is my favorite meal of the day too. I love when everything slows down on the weekends and there is time to have a leisurely start to the day-- wake up early, put time into making breakfast, drink coffee and share the morning with someone you love!
